Driving with the mouse is not supported by the game. My personal experience is that it's not very easy to drive with a mouse.

The kart in the latest release is pretty much impossible to drive, and I have improved that a bit in the development version.

If you want to try the new settings, there is a file attached to this message. Download it and put it in data/kart_data/default/. I will post a second file to put in the same location.
